One of my all time favorite foods are sweet potatoes. Not only are they one of the best carbohydrate options out there (plus a ton of Vitamins A and C), but they can also taste pretty bomb. I've been trying out different ways to make them and I found the perfect recipes.

I eat sweet potatoes with my meals. I eat them as snacks. I'll eat them hot. I eat them cold.  They're the perfect food for satisfying that sweet tooth craving, while still being something thats super good for you. 

Another great thing about cooking sweet potatoes is that its super cheap! You can get 5 big sweet potatoes for the week for about $6. I've used these recipes to take to dinners, when I've had people over, and just to snack on in between meals. I've included my two favorite versions of this recipes. They're both super easy to make with a just a few tweaks. Give this a try and let me know what you think! 

Sweet Snacking Sweet Potatoes 
Ingredients: 

1-2 large sweet potatoes  
(or 2-3 smaller sweet potatoes) 
Coconut Oil 
Sea Salt 
Cinnamon  

Directions: 

  1. Pre-heat oven to 450 

  2. Rinse and dry sweet potatoes 

  3. Optional- Peel potatoes ( I like them crispy so I leave the skin on) 

  4. Cut Potatoes into 1/2 inch circles, not too thick or too thin
    (Be Careful when cutting these. They're usually super dense and hard to cut through. Just ask my poor fingers.) 

  5. lace potatoes into pan/baking sheet 

  6. Coat pan and potatoes with coconut oil 

  7. Sprinkle 1 teaspoon Sea Salt 

  8. Add in 1 tablespoon of Cinnamon 

  9. Cook for 30-40 minutes.
    (I like mine a little crispier so I aim towards 40 minutes) 

  10. Let cool and start snacking.   

 

Savory Spicy Sweet Potatoes 
Ingredients: 

1-2 large sweet potatoes 
(or 2-3 smaller sweet potatoes) 
Olive Oil 
Kosher Salt 
Cayenne Pepper 
Black Pepper 

Directions: 

  1. Pre-heat oven to 450 

  2. Rinse and dry sweet potatoes 

  3. Optional- Peel potatoes ( I like them crispy so I leave the skin on) 

  4. Cut Potatoes into 1/2 inch circles, not too thick or too thin 
    (Be Careful when cutting these. They're usually super dense and hard to cut through. Just ask my poor fingers.) 

  5. Place potatoes into pan/baking sheet 

  6. Coat pan and potatoes with coconut oil 

  7. Sprinkle 2 teaspoons of Kosher Salt 

  8. Add in 1 teaspoon Cayenne Pepper

  9. Toss in 1 pinch of Black Pepper

  10. Cook for 30-40 minutes.

  11. Enjoy!
